A Restaurant-quality meal, made in 30 minutes at home.

Ingredients

  • 8oz pasta shells
  • 6 slices of thick cut bacon
  • For vegetarian friends, use 2 Tbsp. butter instead
  • 1/2 white onion, diced finely
  • 2 garlic cloves, minced
  • 2 handfuls of spinach
  • 1/4-1/3 cup heavy cream(adjust for desired level of creaminess)
  • 1 cup ricotta cheese
  • salt, pepper, nutmeg

Directions:

Step 1

Mise en place. Bring water for pasta to a boil, cover and cook pasta to doneness. Finely dice the onion and mince garlic. Measure out the ricotta, heavy cream and give that spinach a clean. For optimal mouthfeel, I recommend roughly chopping the spinach.

Step 2

Bust out that skillet, cast iron is magic, everything will be done in this skillet. For my vegetarian friends not using bacon, melt your butter. If using, cook up bacon, leaving fat in the pan and removing strips, chopping into chunks. Add garlic and onion to skillet, stir while cooking for 2 minutes. Add chopped spinach, salt and pepper. Starting with 1/4 cup, add in heavy cream and 1 cup ricotta cheese. Mix until creamy, adjust as desired.

Step 3

Toss cooked shells and bacon into mixture. Taste and adjust with salt, pepper and a pinch of nutmeg. Viola
